Three ingredients. Three minutes. Quick Apple Crisp!

Why apple crisp in the middle of summer? Because I was excited to harvest exactly 6 apples (tiny bruises and all) from my espalier Gravenstein apple tree before the deer, birds, or squirrels got them. Can always hope for better next year. Gravenstein apples typically ripen late July to early August which at least my tree has right!

Grand Slam Berry Crisp has been my instant dessert recipe forever, made with Triple Play Granola, so I tried the same with two of my precious apples. A light crisp granola vs a very chunky dry granola mix is best for the short microwave bake time. This time I had a bag of Semi Freddi Granola with oats, almonds, sunflower and pumpkin seeds, dried blueberries and cranberries that is delish in this dish.

I thought about adding a drizzle of melted butter but tried it first without. It was a success to my taste, so I stayed with simple. I think it’s perfect without adding sugar, but you can play with that to taste, maybe adding a pinch of brown sugar depending on your fruit and granola. This whole idea works with in-season stone fruits and berries too!

Serve warm or cool with sweetened whipped cream or vanilla ice cream for the icing on the crisp! Let me know if you jump up right now and make dessert!

Quick and simple, three steps to Apple Crisp:

  1. Dice apple into small pieces, enough to fill individual serving dishes.
  2. Top apples with 3-4 tablespoons granola.
  3. Microwave on high power for 3 minutes. Three minutes was perfect in my microwave for the two dishes shown. Microwave cook times vary. Turn the dishes around after 2 minutes if you’d like to give it extra attention.

Tips:

  1. Add a sprinkling of raisins or other small diced dried fruit
  2. Dust with cinnamon, nutmeg, or ginger if you please
  3. Add additional minutes in the microwave as needed until fruit is soft when checked with tip of a sharp knife. More dishes baked together may need longer bake time.

1) Blow up a balloon
2) Cross-tie with string or yarn at knot, leaving long tail for hanging
3) Mix 2 cups water with 2 cups flour until smooth
4) Lightly dip one side of torn newsprint into flour mixture, squeegee excess with fingers
5) Lay strips in cross-cross pattern over entire balloon, leaving small opening around knot
6) Hang until completely dry. (In Arizona about 15 hours)
7) Gently pop balloon when entire paper mache is dry
8) Fill with mini fruit snacks, candy, kid toys
9) Hang from a tree with plenty of space around
10) Swing bat or stick and have fun!
