Summer is a tasty time to eat your veggies, and it’s so easy to grill them alongside your steak, chicken, fish etc.  What I really like about grilling veggies is it’s an “ad lib” kind of thing. You can prepare 4-5 cups of cut-up veggies or just 2 cups. Use more or less olive oil or vinegar. Try different herbs. The more often you grill vegetables you’ll learn how long to grill them to suit your taste, and how big or small to cut them.  (If you live in an apartment or condo and can’t use an outdoor grill, see my “grill notes” for stovetop grilling in an iron skillet.)

There are three basic ways to grill vegetables:  1) Use a metal grill basket or flat grill pan for cut-up veggies.  2) Grill directly on the grates using large pieces of vegetables—zucchini for instance, cut in half length wise, or whole asparagus spears.  3) Skewer cut vegetables on wood or metal skewers.
I most often use my metal grill basket because it seems easier to manage on the grill. I think of it as stir-frying on the bbq.
Rita’s Grilled Summer Squash

Ingredients
–  Summer squash – zucchini, crook neck, pattypan etc.  Any combination and any amount that fits the grill pan with enough room to stir veggies while cooking.
–  Olive oil
–  Balsamic vinegar (1-3 tablespoons), or wine vinegar (red or white)
–  Chopped fresh rosemary and/or fresh sage or thyme
–  Kosher salt & fresh-ground pepper
–  Optional ingredients: Japanese eggplant (in photo above); whole mushrooms; red onion cut in wedges; whole peeled garlic cloves. There are many possibilities. Garlic cloves should be large; mushrooms about 1-1/2” wide caps. Cut larger mushrooms in half.

Prep
–  Rinse vegetables and pat dry. Cut into chunks—1/2 – 3/4” if you want them to be finished cooking when your meat or fish is done. (See grill notes below.)
–  Peel garlic. Rub mushroom caps with a damp towel and trim off ends of stems.
–  Place vegetables in a large bowl. Mushrooms and garlic too.
–  Drizzle vegetables with olive oil, and some of the vinegar. Toss to coat; repeat.
–  Sprinkle with salt, pepper and rosemary. Toss again. Let stand 10 to 30 minutes.

Grilling
–  Preheat the barbeque and place grill pan on top of the grates to one side, leaving room for whatever else you are cooking. The grill pan should be hot before you add the vegetables.
–  Use a large, long-handled metal spoon to add vegetables to pan. Close grill cover; cook about 10 minutes. Stir vegetables. Continue to grill and stir until vegetables are tender and nicely browned on at least one side. Done!

Grill Notes
–  My experience is based on using a gas grill.
–  How hot the grill should be is determined by the protein you are cooking. If your chicken or fish needs medium heat, the vegetables will take longer to cook. And that’s okay.
–  No outdoor barbecue? Use an iron frying or grill pan to nicely brown vegetables on the stovetop. Use whole vegetables such as asparagus spears (in springtime), or cut summer squash in half lengthwise. Heat a little olive oil in the pan. Add the marinated vegetables to the pan, cut side down and side-by side. Cook over high heat until lightly browned. Turn and continue to cook until tender.

    Thanks for the lovely blog, I could smell the heavenly aroma. This is by far the best grilled veggie recipe on Google. I have seen so many today… But chose yours.. Thanks… I have marinated my veggies… Let’s see how they turn out to be after grilling…

Quick and simple, three steps to Apple Crisp:

Dice apples or stone fruit into small pieces, enough to fill the number of individual serving dishes you want to make.
Top fruit with 3-4 tablespoons granola.
Microwave on high power for 3 minutes. (Microwave cook times vary). 
Turn the dishes around after 2 minutes if you’d like to give it extra attention.
Tips:

Add a sprinkling of raisins or other small diced dried fruit
Dust with cinnamon, nutmeg, or ginger if you please
Add additional minutes in the microwave as needed until fruit is soft when checked with tip of a sharp knife. More dishes baked together may need longer bake time.
Serve with sweetened whipped cream and/or vanilla ice cream.

The cake is probably the most perfectly written cake recipe I’ve ever read — thanks to dear Flo Braker who is greatly missed in our baking world, though her cookbooks live on. Her Buttermilk Cake and Classic White Cakes are in her book The Art of Perfect Baking which you can find on-line or in libraries. I think Flo wouldn’t mind me sharing her recipe. She was a most generous baking friend.
